Understanding IDDSI Level 2: Nectar Thick

The International Dysphagia Diet Standardization Initiative (IDDSI) framework provides a common language for describing food textures and drink thicknesses. We're unpacking IDDSI Level 2, which focuses on mildly thick liquids or nectar thick.

IDDSI Level 2 refers to liquids that are slightly thicker than regular thin liquids but still flow relatively easily. These liquids are often described as "nectar-thick" or "mildly thick."

Characteristics:

  1. Flows quickly off a spoon
  2. Leaves a thin coating on the back of a spoon
  3. Can be drunk from a cup
  4. Requires a little more effort to drink than regular thin liquids
  5. Can be taken through a straw, though a wider straw may be needed

Testing IDDSI Level 2:

The IDDSI Flow Test is used to determine if a liquid meets Level 2 criteria. Using a 10ml syringe, 8-10 ml should flow through in 10 seconds.

Examples of Level 2 Liquids:

  • Thin milkshakes
  • Liquid yogurts
  • Some fruit nectars
  • Moderately thickened water or juice
  • Some liquid nutritional supplements

While safety is paramount, it's important to consider flavor and variety. Experiment with different bases (juices, milk, broths) to enhance palatability.

Remember, IDDSI Level 2 is just one part of a comprehensive dysphagia management plan. Always consult with a speech and language therapist or dysphagia specialist to determine the most appropriate consistency for each individual.
